Pizza Snowballs

I found theses on Pinterest and Isaac made them last night. Homemade pizza rolls out of Biscuit in a can. They were wonderful. We will be making these again.

Pizza Snowballs (A Pizza Pocket Recipe Kids Can Make) – And a Post-Vacation Menu Plan

I’m writing this as we drive home from Disney World.

Before we left, we had our final picnic supper for baseball season, and the unanimously requested repeat meal was Pizza Pockets!

But it’s summer, and I was packing for our trip, and I just didn’t have it in me to make even the easy-recipe dough from scratch. So I adjusted an idea I’d heard and created a version of pizza pockets that the kids could make.

And they were wonderful!

My best friend’s kids participated in a cooking class where they made a similar recipe with turkey and cheddar cheese. (I asked if the teacher had a blog, so I could link to her, but she doesn’t.)

Pizza Snowballs

Ingredients:

Canned biscuits

Pepperoni (or cooked and crumbled Italian sausage)

Shredded mozzarella

Muffin tins

Instructions:

Spray the muffin tins with cooking spray. (It turns out this isn’t the best job for a 5yo.)

Use kitchen scissors to cut the canned biscuits into four pieces each.

Chop the pepperoni into small pieces.

Hold three to four biscuit pieces in your hands and have mama sprinkle mozzarella cheese and pepperoni on them.

Pack and squeeze it all together like a snowball.

Place into the muffin tin.

Bake at 350 for around 15-17 minutes, or until the biscuits are golden brown.

Mmmmm.

We LOVED these. Hubby felt like the ones with less dough were better. We had been using three pieces of biscuit for each one, but then started running out of pepperoni, so we made some with four. The ones with three were better proportioned.

Some (like the ones above) looked beautiful.

Some looked delicious.

I have the best Aunt who sends us boxes of clothes for the kids. She spends hours in the consignment shops and put together outfits that look like they were made to go together. She is sweet and caring and I Love how she provides for us in this way. My kids love the new to them clothes.

Past Week

I have been trying to post all week.


Last weekend we had a fun and busy time.

Saturday we went to Lowes in the morning and made police car with flashing lights. The kids got to hammer and put sticker on the car.


Then from 11-12 Janna went to her friend's Sarah Y's house for a play date. This was first time that I actually left her there. I went home and cleaned while Isaac played with Simon. Then from 12-1pm we went to the big park and met Mr. Bill and Brooke to play. Then we had lunch at home and napped. Then we went out to dinner at a new restaurant Gioovani's. It was very good. I have never seen Janna or Simon eat that much. They both commented that they loved this pizza. A big plus...free for them both. We will be going back. Then we all went to Lexington to Ben and Nate's house. Ms. Alison's class of friends had a play date with popcorn, cupcakes, smores, etc...Janna loved seeing her old friends and we had a good time too.


Sunday we went to church, then rested, played in the sandbox, and relaxed.

Tuesday at lunch got a call saying Simon had a fever. Isaac stayed with him in the afternoon, while he napped most of the afternoon. Then I stayed home on Wednesday with him and took him and Janna to the doctor. No ear infection, no strep, but gave us amoxicilin in case second strep test came back positive. We stopped by sonic for dinner and ice cream. Isaac was teaching class that so we were on our own. Still had fever that night. Thursday morning he woke up late, Isaac stayed home, I went to work, fever gone and feeling much better. Friday back at school.

Janna did great at swim lesson last night and even put her nose in the water and blew bubbles.

Work has been very busy for both Isaac and I this week.

This week has gone by fast:)

Weekend

I am looking forward to the weekend.
Tonight I get to scrapbook.
Tomorrow morning we are building a police car at lowes (for free!)

LilAngel Sale

I went to the Lil Angel sale today at lunch. It is big indoor yard sale for kids clothes/toys/books/etc. It was a lot smaller this time, I don't think it was well advertised.

I did get......
3 pants for Janna (really hoping they fit)
3 shirts for Janna
1 heavy winter purple jacket ( it is thinner and less poofy than her other two)
1 purple fuzzy sweatshirt to replace the pink one (which is 3T and very loved)
1 very soft beige sweater

1 footed pj for Simon
1 pair of Elmo slippers (replacing the ones he outgrew)
1 cheerleader pompom set

I will need to go pants and shirt shopping with Janna eventually but this will get us by this cold week or weeks.

DVD player

Our DVD player finally died and we were forced to get a new one since we have a ton of DVD and kids ones. I am excited that Isaac found one in our price range that also allows us to get Netflicks on the TV. We are all loving it. The kids are loving the new shows. We have been watching: FragleRock, Heathcliff, SpiderMan, Kipper, Angelina, etc....Isaac loves all the Sci Fi tv shows and movies. I like the show Drop Dead Diva. It is a great short show that we watch together when there is nothing good on TV. I have yet to watch chick flicks, I am too tired to stay up.

This is one/two purchases that we have gotten our money's worth in the first week.

Blessings

God has really blessed us. He has provided for our needs. I know I shouldn't worry but I was and he answered a big prayer this week. Thank you God for always being there and giving me the trust I need.

Janna update

Janna said pledge of allegiance this week. I had no idea she knew it. I am so proud.

We are working on her popcorn words with flash cards.

She is very excited about her pajama party on Friday at school where she will be making applesauce and apple pie. They earned the party for good behavior in the hallway.

Janna now has a silver tooth, and I am hopeful to not go to the dentist for a LONG time now. She was really well behaved in the office and the Dentist asked if she is always this good. The gas makes her tired and she fell asleep early last night.

Labor Day Weekend

Friday night we traveled up to see my parents. The kids were excited to see their grandma and grandpa.

Saturday was the hottest and most humid day of the year so we did indoor stuff. We went to Florence Mall and the kids rode a train that goes around the mall, the carousel, and a couple riding toys. Then the kids got ice cream. We had LaRosa for dinner and then Isaac and I went on a date to see Colombiana. We got a UDF shake afterwards.

Sunday we were suppose to get Simon's three year pictures, but that boy refused to let go of grandma, so we just headed home. At least I tried. We still have even got a good snap shot to enlarge for their room. I had lunch with my friend Jaimers. After three restaurants were closed due to the holiday we found an open one. It was smokey and not great great but time with her was awesome. Even though it was rainy and cool we decided to go to the WEBN fireworks. We parked and then walked to the river. It was a long walk. We took turns holding the kids and it did rain. We found a spot under a patio and were able to get out of the rain. The rain quit in time for the fireworks. It was a good show. Simon used his ear plugs and every time a green one went off he would say green. A little bit after they started both kids were very tired and asked to go home....we stayed. We all enjoyed the adventure! We got to see the firework waterfall from the bridge and that was really cool.

Monday we went to the zoo. It was a cool day, almost too windy. It was very nice. We rode the train and saw the bird show. The bird show was our favorite this time. The kids were really good and didn't act up even once.

We got White Castle chicken rings on the way home. Janna (who doesn't eat much) had four and we told her no to more. Simon had three. I would love to find these frozen in a box here. They are so good.

Now onto a cool and rainy week.

Simon Update


Simon has been sharing so much more with us now that Janna is on the bus early and he has more one on one time with us. Or maybe he is just talking more, either way, I am loving it.

For months now we have been getting notes that he is learning sign language for colors. This week he showed us all the ones he has learned, over and over and over. It is great. Yesterday he sang a poem/song he learned today. We sang it over and over. At night he has been talking more too.

When asked about his day he will just tell you who he played with. It is nice to know he is learning too. I asked him if I could record him with his song and colors. He said no. He doesn't like the camera right now.

Isaac and I have been tired and not following through on the making him sit on the potty, maybe next week.

In the mornings if his teacher isn't there then he loves Mrs. Diane. She is the daycare's cook, it totally surprised us when he started asking for her. Simon loves her big hugs and doesn't scream when she is available. That makes the mornings better for me.

Simon still loves green and blue. He eats the same meal all the time-chicken and honey and green applesauce with sprinkles. He will eat a bagel and toast and sometimes a waffle. He does like Cheetos too. He will eat pizza crust-not the pizza.

Simon loves the books Brown Bear Brown Bear and Polar Bear Polar Bear. These are shorter than the grumpy ladybug so this is fine with me. He also loves Mouse Paint.

Simon likes to play with playdough.

Simon sleeps with a ton of stuffed animals. I don't know how he fits some nights.

Simon loves elephants!

Simon gives the best hugs and kisses. I am so thankful to have my Simon!
